Hickory

The backbone of Southern BBQ. Hickory burns hot and produces a bold, bacon-like smoke that pairs perfectly with pork ribs, shoulders, and brisket. Use it confidently for long cooks — just don't overload the firebox, as too much hickory can tip from savory to bitter.

Oak

The workhorse of cooking wood. Oak burns long and clean with a medium smoke that complements almost anything — beef, pork, lamb, and poultry. It's the default choice for Texas-style brisket and an excellent base layer when blending woods.

Cherry
